To make these Sicilian cheese-filled snacks, you first have to make risotto, then use the risotto to make cheese-stuffed balls, then coat them with breadcrumbs and deep-fry them.   • Arancini need tomato sauce too. It’s not just the risotto. They need to be mixed in with just a bit of tomato sauce so they look kind of pink on the inside.

  • Honestly these are not arancini, writing from sicily i can assure you that these thing are nowhere to be found nor in restourants nor in any sicilian home. 1st: no need for the risotto just put in a pot 2,5lt of tap water for every 1kg of rice (you got the right kind of rice, carnaroli is oK, do not use blond or other stuff), we also put in there saffron to make it yellow. 2nd: the stuffing with just mozzarella does not exists, either with ragù (a very dry one, you will need to make balls of it) or with prosciutto and scamorza held toghether by besciamella (ideally instead of scamorza you will want to use "primo sale" a kind of sicilian cheese) 3rd: you can pass the finished arancini in beaten egg but the better option is to use a light mixture of water and flour, eggs are generally used on the 13th of december because it is tradition not to eat flour or flour derivatives during that day (it is a strange sicilian tradition based on some saint). btw, calabrian chilly is not sicilian, as the name suggest they are from Calabria. We do not dip our arancini, and they tend to be bigger, more or less as a human fist.

  • as an italian from sicily, I remember the arancini big time. Allthough we didn't use risotto, but simple cooked rice and filled them with bolognese sauce and mozzarella. We also shaped them pointy on one side of the ball. Arancini are an enourmus part of my childhood and it's quite interesting to see this method. I'm gonna try to make them this way for christmas.

  • They look ok, a few observations: 1 the carnaroli to onion ratio is off, too much onion. 2 garlic does not belong in risotto. 3 traditional arancini have also ragù and green peas inside with the melty cheese. 4 the size is off, too little pieces. 5 we don't dip our arancini in anything they are perfectly moist by themselves. Bel lavoro comunque, continuate cosi, bravi!

  • i worked for nancy silverton’s pizzeria mozza in newport and learned to make these, arancini translates litterally to “little orange”. absolutely obsessed with this dish.
